I use the Chinese method for this bread.The Chinese method, also known as the secondary fermentation method, refers to the method that goes through the secondary fermentation stage in the production process. After the fermentation stage, the bread can form a better network organization and produce a unique bread fermentation flavor. The secondary fermentation method can make the dough produce a very strong wine flavor and the dough more mature through a long time of fermentation, making the bread softer and keep it softer for a longer time.

1. Just knead the Chinese dough into a ball. It doesn't take much effort to knead it2. If it is an ordinary baking tray, it is best to pad a layer of oil paper or tin foil to prevent sticking3. The temperature during baking can be adjusted according to the situation of your own oven

Step 1 . Making medium kind dough: add 245g high gluten flour, 3G salt and 3G yeast and mix well

Step 2 . Pour 100g of water and dough (no need to knead), and put it in a warm place to wake up

Step 3 . The dough can be doubled in size, and the internal organization has obvious honeycomb shape

Step 4 . Tear the dough into small pieces and put it into the bread bucket

Step 5 . Then add 115g high gluten flour, 50g soft white sugar, 1g yeast, 95g milk and 25g corn oil in turn, and turn on the flour mixing function to stir two procedures

Step 6 . Take out the stirred dough, divide it into 15 parts, each of which is about 40g, round it in turn, cover it with fresh-keeping film and relax for 15 minutes

Step 7 . After relaxation, roll one side of the dough into a rectangle and thin it at the bottom (as shown in the figure)

Step 11 . Put it into the oven to ferment, and put a small bowl of hot water for fermentation

Step 12 . After fermentation, brush the surface with egg liquid

Step 13 . Preheat the oven at 170 degrees above and below the fire, place the baking pan in the middle layer and bake for about 15 minutes. You can be satisfied with the coloring (if the coloring is too fast, you can cover it with tin foil)
