The ingredients used in this dish are very common, but they add up to a very good taste. Even people who don't like bitter gourd will give it a thumbs up. This is my specialty. My family, friends and colleagues around me have been conquered by this dish. It's awesome!

Balsam pear should be stewed until it is soft and rotten. Pickled cabbage itself is a little salty, so you can't add too much soy sauce.

Step 1 . The materials are ready.

Step 2 . Just fry the pork belly directly. This one is leftover from noon, almost all of it is fatty meat, so it can produce a lot of oil without refueling

Step 3 . Fry the pork belly until it's almost oily, then scoop it up. Add the soaked shiitake mushrooms and fry until you smell the fragrance, then scoop it up.

Step 6 . Pour in an appropriate amount of soy sauce and continue stir frying bitter melon. I added about 3 tablespoons, but I forgot to take a photo. Stir fry for a while, then add the fried shiitake mushrooms, pork belly, and red chili. Continue stir frying for a while

Step 7 . Then pour in an appropriate amount of boiling water, which can almost submerge the ingredients. After the water boils, turn down the heat and cover the pot to simmer. Occasionally, open the lid and stir

Step 8 . When the balsam pear is soft, you can add pickled Chinese cabbage. Stir it well and continue to cover it. If there is not enough water, you can add some boiling water

Step 9 . I need to stew the bitter gourd until it's completely soft before it tastes good. I stewed it for about 40 minutes, and then added a little celery. If it's not, you can skip it and try whether the saltiness is enough. If it's not, you can add some salt. Finally, add some chicken powder and simmer over high heat until the sauce is ready
