The water for stewing soup must be boiled water.

Step 1 . Cut the beef into pieces, use kitchen paper to absorb some moisture, cut the white onion in pairs, cut the white radish and carrot into pieces, and cut the scallion into sections. Ginger and red onions, burn over high heat, the surface is a bit dark, don't worry, it will be washed later.

Step 2 . Wash the surface of ginger and scallions that have been burned with open flame to remove any black dust. Boil ginger and scallions over open flame, and the resulting soup will have a unique aroma.

Step 3 . Peel 7-8 garlic cloves and set aside.

Step 4 . Put the spices used for making soup into a pot and bake over low heat to release the aroma. After cooling, put them in a small tea bag for later use.

Step 8 . Put a little oil in the pot and add beef chunks. It doesn't need to be cooked, just fry it to make the surface set. When stewing, it can maintain its shape intact. Once cooked, pour it directly into the soup pot.

Step 9 . Put the white radish chunks, carrot chunks, and the previously baked spice packet into the soup pot.

Step 10 . Add boiling water to the soup pot, be sure it's hot water. It's not enough for all the ingredients, so you need to add enough water to the soup at once. In the picture, I didn't have enough hot water in one pot, so I boiled another pot later. Bring to a boil over high heat, beat up a dozen foam on the surface, then simmer on low heat for 1 hour. Remove the onions, celery, and scallions from the heat, leaving only the white radish, red radish, and spice packet. Add an appropriate amount of salt and simmer for another half hour. Finally, remove the spice packet and add a spoonful of fish sauce, a little mushroom essence, or chicken essence before serving.

Step 11 . Rice noodles made of red brown rice, put it in a bowl after being scalded.
